Ingredients · per serving
- 1 tsp Dried oregano
- to taste Black pepper
- ½ tsp Chili flakes
- 6 cloves Garlic
- 250 g Penne
- 6 tbsp Olive oil
- 200 g Feta
- 500 g Cherry tomatoes
- to taste Salt
- 1 small bunch Fresh basil
Instructions
- Heat the oven to 220°C/200°C fan. Tip the cherry tomatoes into a baking dish.
- Place the whole block of feta in the centre of the tomatoes. Add the smashed garlic cloves around the feta.
- Drizzle with 4 tbsp olive oil, sprinkle with dried oregano, chili flakes, salt and pepper. Toss the tomatoes (not the feta) gently to coat.
- Bake 25-30 minutes until the tomatoes have burst and the feta is golden and soft.
- Meanwhile, bring a large pot of well-salted water to the boil. Cook the penne to packet time. Drain, reserving a mug of pasta water.
- Pull the baked tomato-feta dish from the oven. Mash with a fork or spoon — the feta should crush into the tomato juices, creating a thick creamy sauce.
- Tip the drained pasta into the dish with a splash of pasta water. Toss vigorously to coat every piece. Tear in fresh basil leaves. Plate, scatter more basil and a drizzle of olive oil. Black pepper.
