- 120 g Cucumber
- drizzle Chili oil
- 1 lime Lime
- 1 tsp Toasted sesame seeds
- 120 g Wheat noodles
- 1 clove Garlic
- 1 tsp Honey or maple
- 2 tbsp Peanut butter
- 1.5 tbsp Rice vinegar
- 1 tsp Fresh ginger
- 1 tsp Sesame oil
- 2 tbsp Soy sauce
- 1 tbsp Tahini
- small handful Fresh coriander
- 2 stalks Spring onion
- 30 g Peanuts
Instructions
- Cook noodles to packet. Drain, rinse cold to stop cooking.
- Whisk: peanut butter + tahini + soy + rice vinegar + sesame oil + ginger + garlic + honey + lime + chili oil + 3 tbsp warm water until creamy.
- Slice cucumber ribbons with peeler. Slice scallion. Crush peanuts.
- Tip noodles into wide bowl. Half dressing over. Toss until every strand coated.
- Plate. Top with cucumber, scallion, peanuts, coriander, sesame, chili oil.
- Cold. Extra dressing on side.
