- 15 g Plain flour
- to taste Black pepper
- 2 slices Bread
- 80 g Gruyère cheese
- pinch Nutmeg
- 15 g Butter
- 1 tsp Dijon mustard
- to taste Salt
- 60 g Cooked ham
- 120 ml Whole milk
Instructions
- Make the béchamel: melt the butter in a small saucepan over medium heat. Whisk in the flour, cook 1 min.
- SLOWLY pour in the warm milk while whisking constantly to keep it smooth. Simmer 3 min until thickened to a creamy sauce.
- Off the heat, stir in 30g of the grated cheese, the Dijon mustard, a pinch of salt and pepper, and a tiny grating of nutmeg.
- Heat your oven grill (broiler) to high.
- Lightly toast the bread slices: 1 min per side under the grill until pale gold but still soft.
- Spread a thin layer of béchamel on each toasted slice.
- Lay the ham slices on one slice of bread. Top with half the remaining grated cheese. Close the sandwich.
- Slather more béchamel generously on top of the closed sandwich. Sprinkle the rest of the cheese all over the top.
- Place on a baking tray. Slide under the grill 3-4 min until the cheese is golden, bubbling, and slightly charred at the edges.
- Serve immediately — best eaten while the cheese is still molten.
