Ingredients · per serving
- 50 ml Vegetable stock
- ½ lemon Lemon
- small handful Fresh parsley
- 80 g Soft goat cheese
- to taste Black pepper
- pinch Chilli flakes
- 3 cloves Garlic
- small handful Fresh dill
- 2 tbsp Olive oil
- 4 eggs Egg
- ½ tsp Ground cumin
- 1 leek Leek
- to taste Salt
- 300 g Baby spinach
- to serve Crusty bread
Instructions
- Heat olive oil in a wide skillet. Add sliced leek + garlic, cook 5 min until soft.
- Add cumin + chili flakes, stir 30 sec.
- Add spinach in batches, wilting between additions. Add chopped dill + parsley + splash of stock.
- Stir in soft goat cheese to melt slightly into the green sauce.
- Make 4 wells, crack eggs in. Cover, cook 4-5 min until whites set, yolks runny.
- Top with extra herbs + lemon. Serve with crusty bread.
