Quick Beef Stir-Fry with Noodles

Instructions

  1. Slice the beef across the grain (perpendicular to the lines in the meat) as thin as you can — 3mm strips. This makes it tender.
  2. In a small bowl, mix the soy sauce, oyster sauce, sugar, cornflour, and 2 tbsp water. This is the sauce.
  3. Cook the noodles per packet (usually 3 min in boiling water). Drain, rinse with cold water, set aside.
  4. Heat 1 tbsp oil in a wok or large frying pan over the highest heat your hob can do.
  5. Add the beef in a single layer. Don't move for 1 min — let it sear. Stir-fry 1 min more until just brown. Lift onto a plate (it'll finish in the sauce).
  6. Add another splash of oil. Add the sliced pepper and broccoli florets. Stir-fry 3 min — they should still have crunch.
  7. Add the minced garlic, grated ginger, and white parts of the spring onion. Stir-fry 30 sec.
  8. Return beef to the pan. Add cooked noodles. Pour over the sauce. Toss everything together 1 min — sauce will thicken and coat.
  9. Off the heat, drizzle sesame oil. Scatter spring onion greens. Serve.
