Instructions

  1. Heat 1 tbsp oil in a large lidded frying pan over medium-high heat.
  2. Add the sausages. Brown all over, turning every 2 min — about 8 min total. Lift onto a plate (they'll finish cooking later).
  3. Lower heat to medium. Add the sliced onion to the same pan. Cook 5 min, stirring, until soft and starting to caramelise.
  4. Add the cored, sliced apple. Cook 2 min — should take on a light gold colour.
  5. Add the shredded cabbage. It'll look like a mountain — push it down. Cook 3 min, stirring, until it starts to wilt.
  6. Sprinkle in the dried sage (or thyme), mustard, and a generous grind of pepper. Pour in the apple juice or stock. Stir.
  7. Nestle the sausages back in. Cover. Lower heat. Cook 8 min — sausages finish cooking and cabbage gets meltingly soft.
  8. Lift the lid. Taste — adjust salt. Serve straight from the pan with mash or crusty bread.
