- 150 g Cabbage (or leftover greens)
- 1 apple Apple
- 1 tsp Wholegrain mustard
- to taste Black pepper
- 80 ml Apple juice or stock
- 1 tbsp Olive oil
- 2 sausages Pork sausages
- ½ tsp Dried sage
- to taste Salt
- 1 onion Onion
Instructions
- Heat 1 tbsp oil in a large lidded frying pan over medium-high heat.
- Add the sausages. Brown all over, turning every 2 min — about 8 min total. Lift onto a plate (they'll finish cooking later).
- Lower heat to medium. Add the sliced onion to the same pan. Cook 5 min, stirring, until soft and starting to caramelise.
- Add the cored, sliced apple. Cook 2 min — should take on a light gold colour.
- Add the shredded cabbage. It'll look like a mountain — push it down. Cook 3 min, stirring, until it starts to wilt.
- Sprinkle in the dried sage (or thyme), mustard, and a generous grind of pepper. Pour in the apple juice or stock. Stir.
- Nestle the sausages back in. Cover. Lower heat. Cook 8 min — sausages finish cooking and cabbage gets meltingly soft.
- Lift the lid. Taste — adjust salt. Serve straight from the pan with mash or crusty bread.
