Instructions

  1. Heat the olive oil in a wide frying pan over medium heat. Add the chopped onion and diced green pepper. Cook 5 min until soft.
  2. Push the veg aside. Add the beef mince to the empty side. Brown 4 min, breaking it up with a spatula.
  3. Combine mince and veg. Add the minced garlic, stir 30 sec.
  4. Stir in the tomato paste, ketchup, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, and a pinch of salt and pepper.
  5. Add 100ml water. Bring to a simmer. Cook 10 min uncovered, stirring occasionally, until the sauce is thick enough to cling to the mince.
  6. Taste — should be tangy-sweet with a deep savoury depth. Adjust sugar or vinegar if needed.
  7. Toast the buns cut-side-down in a dry pan for 30 sec.
  8. Spoon a generous mound of the meat mixture onto the bun bottoms. Don't squash with the top — leave open-faced so you can see the filling.
