- 1 tbsp Mayonnaise
- 1 tsp Ketchup
- 4 slices Dill pickles
- to taste Black pepper
- 1 tsp Butter
- 2 slices American cheese slices
- 150 g Beef mince
- to taste Salt
- pinch Smoked paprika
- 1 bun Brioche bun
Instructions
- Divide the beef mince into 2 loose balls — don't pack them. Season the bun cut-sides with butter, toast in a pan until golden, set aside.
- Heat a heavy skillet (cast-iron best) over high heat until smoking. Place the beef balls in the dry pan, then smash each one HARD with a spatula until it's about 1cm thick and almost see-through at edges.
- Season tops with salt + pepper. Cook 90 sec — DO NOT MOVE THEM. The lacy crispy edges are the whole point.
- Flip carefully (scrape with the spatula so you keep the crust). Lay a slice of cheese on each, cook 30 sec more, then stack one patty on top of the other so both cheese slices melt together.
- Stir mayo + ketchup + pinch of smoked paprika for the sauce. Spread on both bun halves.
- Build: bottom bun → pickles → double-stacked patties → top bun. Press gently. Eat immediately while crispy.
