Ingredients · per serving
- small handful Fresh parsley
- 250 g Sweet potato
- to taste Black pepper
- 2 cloves Garlic
- 1 tbsp Olive oil
- 2 eggs Egg
- few dashes Hot sauce
- 1 pepper Red pepper
- 80 g Red onion
- 60 g Chorizo
- to taste Salt
- 30 g Feta cheese
- 60 g Baby spinach
- 1 tsp Smoked paprika
Instructions
- Cube sweet potato 1.5cm. Microwave 4 min to par-cook.
- Heat oil in a large skillet. Add chorizo, cook 3 min. Lift out, leave fat.
- Add sweet potato to the chorizo fat. Cook 8 min pressing flat until deeply crispy.
- Add diced pepper + onion + smoked paprika. Cook 5 min until soft + charring.
- Return chorizo. Add spinach + garlic, stir 1 min to wilt.
- Push to one side. Crack eggs into the empty side. Fry to liking.
- Slide everything onto a plate. Top with crumbled feta + parsley + hot sauce.
